Wagyu Beef – Salmon Steak

The Salmon steak is also referred to as a Mock Tender. This is a round muscle that is found on the scapula of the carcass alongside the Flat Iron. This muscle has slight marbling and is best prepared as a roast or used for ground beef/mince as it is lean.
