Pan-fry Fillet medallions for 10 minutes turning regularly   Oven Bake Cook the fillets in your oven for 5-8 minutes, depending on your preferred level of doneness: 5-6 minutes for rare, 6-7 minutes for medium-rare or 7-8 minutes for medium Braai over extremely hot coals for 8–10 minutes, making sure that all sides of each steak face the coals for at least 1 minute at a time. A 5 cm-thick fillet steak will have at least four but possibly six sides. Remove from the fire and let the steaks rest for a few minutes until serving.   Braai Season the fillet and braai for 3-4min on each side
